Chocolate Pecan Turtles

Why I never attempted to make these at home before; blows my mind! These Chocolate Pecan Turtles are incredibly easy to make, fun for children to help, and require just 3 ingredients!

I love to test out new cookie recipes at the holidays! We love our tried and true family favorite recipes and the holidays just wouldn't be merry without them. This recipe HAS to be added to the family favorite recipes collection, because they are just too good and so simple to make. It's so simple, you can get your children involved!


We usually get to test out these new cookie recipes when we gather at my Aunt's house for our Annual Christmas Cookie Baking Day. My kids look forward to this fun event with my father's side of the family. All the women and children gather in my Aunt's kitchen to help make a variety of cookies. Poppy seed rolls, Pecan Tassies, Magic Bars (my favorite), Snowballs, and all sorts of cookies! We each bake a dozen cookies for each family. That's like 6-7 dozen cookies baked prior to the Cookie Day.


We exchange cookies at the baking party and come home with 6-7 dozen different types of holiday cookies. Our freezer is well stocked in December and Santa is a happy man on the 25th! My Aunt will also have a table set up full of sugar cookies to be frosted. If you aren't helping with cookies to be baked at the island, than you are frosting sugar cookies. The men gather in the living room watching football, stealing cookies, helping to bake, or entertaining the children. My Aunt makes a whole day out of this by serving us lunch and snacks to be enjoyed throughout the day. If you don't do something like this with your family, you should give it a try, and start a new Christmas tradition.

 
 
 

Chocolate Pecan Turtles

(makes about 48 turtles)


- I N G R E D I E N T S -

- I N S T R U C T I O N S -

  1. Preheat oven to 300 degrees.

  2. Line a baking sheet with parchment paper or a oven safe baking mat.

  3. Lay 5 pecans down on the baking sheet in a star shape, making sure they touch at the center.


4. Unwrap your individually wrapped Kraft caramels and place one caramel in the center of each turtle. You should be able to get 12 turtles formed on one cookie sheet.


5. Bake for 8-10 minutes in the oven. Watch that the caramel does not melt and the pecans don't burn. You are just wanting the caramel to get soft; not completely melted.


6. Spray the back of a spoon with Pam to prevent caramel from sticking to it. Take the back of your spoon, while the caramel is still hot, and squish the caramel slightly down into the pecans. You may have to push the pecans back toward the center. Be cautious! The pecans and caramel will be pretty hot to touch.

7. Put your trays in the fridge or freezer so the caramel sets up quick.

8. While your turtles are cooling, gently melt your chocolate melting wafers in a double boiler pan. If you don't own one, you can do this by pouring the chocolate wafers into a medium pot. Using a second pot that is larger than the first, fill the larger pot with water half way. Set pot with water on burner and place the medium pot inside the larger pot. Do not allow water to splash up into the pot with chocolate. It will cause the chocolate to seize and it will ruin the chocolate. Frequently mix the chocolate in the pan. Once melted remove from heat.

9. Take a spoon and pour a generous amount of chocolate over the center of your turtles. Enough to cover the caramel and a little over hang should do the trick! Pop them back in the fridge to set up quickly.

10. Enjoy! Share or don't share, I won't judge. ;)


You can store your Chocolate Pecan Turtles in a plastic storage container, line the bottom of the container with a small piece of parchment paper. Put a piece of parchment paper between layers to prevent candies from sticking to one another.
