These Trail Mix Energy Balls are a twist on a classic road trip snack!
I loved when my mom would make trail mix before road trips or a couple days before school started. These trail mix balls are fun to make and easy to eat! They are perfect to pack in your kids lunch boxes too!
Trail Mix Energy Balls
Bite size treats made with your favorite classic trail mix ingredients! Keep in the fridge for up to two weeks for an easy snack, breakfast, or lunch!
Ingredients:
1/2 cup old fashioned rolled oats
1/4 cup chopped roasted & salted peanuts; I pulse mine in a bullet blender to create a powder consistency
1/4 cup crushed pretzel sticks; I pulse mine in a bullet blender to create a powder consistency
2 TBSP creamy peanut butter
1/4 cup honey
1/4 TSP vanilla extract
3/4 cup trail mix ( a combination of your favorite items in trail mix; I chose cranberries vs raisins and added m&m's!)
Instructions:
Chop peanuts and pretzels in a blender, bullet blender, chopper, or the good ole ziplock bag and super heavy coffee mug trick. Add both items to a large mixing bowl. Combine with the old fashioned rolled oats. Continue to add in your favorite trail mix pieces like raisins, cranberries, chocolate chips, m&m's, etc. Then add the peanut butter, honey, and vanilla extract to the same bowl.
Combine all ingredients until mixed well and creates a dough.
Roll mix into small balls; about 1 TBSP of mix per ball.
Refrigerate to set up; about 10 minutes.
Refrigerate in a air tight container for 2 weeks or freeze in a zip lock bag for 3 months!
These trail mix balls are perfect little road trip snacks for everyone to enjoy! My kids also love them at lunch when we have "snack" lunches. Enjoy Friends!
